Rainbow Salad with Parsley Lemon Vinaigrette
March 1, 2017
When it comes to salads, I’m confident that you already know everything there is to know.
We could have a conversation about it, which would be as follows: “Is it healthy? Of course it is! It’s a salad, isn’t it?”
I mean, as long as it vaguely resembles a salad, it must be good for you, right?
And I’m also sure you’re eating salad for any of the earnest reasons that one usually eats a salad: A desire for healthy greens, fresh veggies and, of course, to get ready for swimsuit season in like no time.
But seriously salad can be delicious, filling enough, and of course healthy.

If you, just like me, think that there are many perfect marriages in the food world — like avocado and chocolate or garlic and butter or orange and pork — then you’re probably already familiar with chipotles in adobo sauce.
If not, let me give you a quick primer.
Chipotles in adobo are dried, smoked jalapeños rehydrated and canned in a sweet and tangy purée of tomato, vinegar, garlic, and a couple of spices, for a tasty sauce that packs serious heat but also plenty of balance and body.
What I really love about chipotle in adobo is that they’re complex enough to use as a solo seasoning but they pair really well with herbs, other spices, honey, etc.
These little suckers can do it all. Sauces, glazes, marinades, braises, soups, sandwiches, you name it.

There are many good reasons to make banana bread:
You have a pile of ripe, sad-looking bananas that have clearly reached their life’s expectancy. You are a fan of things that are incontrovertibly delicious and awesome.
It’s cold outside and you need something comforting to go with your hot beverage.
You’re into recipes you can make in one bowl.
You believe that banana bread could cure any woe.

I have, for a very long time, looked for a chocolate cookie I could award with what I considered the highest honor in the baking world, declaring it the best brownie cookie (aka brookie) ever.
I just didn’t expect it would take me so long to find what I was looking for.
Along the way, I encountered cookies that promised fudgy but delivered cakey; those that were chocolatey in name only; and even versions that were a perfect chocolate cookie, but have little to do with brownies.

Most of my understanding of the category of baked pasta is that it falls in the category of dump casserole.
Basically just combine all the ingredients, dump them into a casserole dish, and let the oven do the rest. Also known as the ultimate unfussy comfort food.
Italian-American baked pasta classics include: Chicken-Spaghetti Casserole, Baked Ziti with Meatballs or Chicken Tetrazzini. Then there’s lasagna, which is just a more refined version of baked pasta.

February is always the time of the year when most of us get caught up in what I like to call the “winter produce stagnation”. The lack of flavorful fruit and the glut of starchy vegetable are enough to kill any enthusiasm.
Still, I find that if I set my mind on citrus I can sail through the winter months with relatively no problems.
Even when the deepest, darkest winter has set in and I’m all fogged in by the relentless grind of being indoors, a bright pink grapefruit, a sunny orange, even a gleaming lemon, reminds me of summer days, warm breezes, and skies as blue as the ocean.
I’ve got an archive full of lemon muffins, lemon chicken piccata, lemon pound cake in mug, raspberry-grapefruit smoothie, orange chicken, and orange glazed salmon that should be enough for me to feel I’m not missing out just because strawberries, peaches, and apricots are still in hibernation.

I’ve been thinking a lot recently about what it means to cook when you’re pressed for time.
I, for one, always had the luxury of time.
Even with a job, a blog, and at least two hours a day dedicated to training, the sum of my evening tasks is still only to make whatever I felt like making for dinner. And it doesn’t really matter if dinner is done at 9 p.m. or even 10 p.m. instead of say 7:30 p.m since I don’t have other mouths to feed (e.g., children) — except for the occasional friend or family member.

So, kale is good for us. We all know this.
It also tastes great. And there are many ways to prepare it: gratins, casseroles, salads, chips, pesto, smoothies, baked, with quinoa, et cetera, et cetera, et cetera.
In fact, I’m unwaveringly certain that the last thing this blog — let alone the internet — needs is another kale recipe.
But I can’t help it.
I made myself some fantastic spaghetti with kale last weekend and I couldn’t not share it.
It would be just rude to keep it from you. Because you and I have no cooking secrets and it should always be that way.

Guys, we should definitely, definitely talk about this dish.
Here, I’ll go first: I think it’s essential that you not let another week pass without making it.
I realize that you might imagine rice cooked with tomato sauce to be something bland and unappetizing.
Maybe you already had it in one of those combination plates that are served in Mexican and Tex-Mex restaurants all the over the country, and its dullness is still fresh in your mind.
Maybe you cannot imagine why anyone would consider Spanish rice (sometimes referred to as Mexican rice) noteworthy, being just rice and tomato sauce — arguably two of the most generic foods out there.
But this Spanish Rice is notable for being delicious in its simplicity. And you should take notice.

I don’t mean to sound overly dramatic, but this might be one of my favorite recipes on the TIY.
I'm aware that it’s not smart to say this — and likely in a couple of weeks I’m going to say the same thing about another recipe — but right now I feel like I need to declare it.
Truth is, these blondies deserve this kind of love and outright favoritism. They’re simple and just so delicious.
If I could think of the perfect treat, it would be one of these Maple Frosted Almond Butter Blondies with a cup of (green) tea or a tall glass of (almond) milk.

Let’s talk about broccoli, shall we?
My favorite way to cook it — and the word “favorite” doesn’t do enough justice to this addictive broccoli recipe — came about mostly by accident, also known in my kitchen as “I’m so distracted by Candy Crush I forgot about the broccoli in the oven...”
But to my own surprise they came out halfway charred and very crisp and looked much better than I though. So I took ‘em one step further and I sprinkled them with Parmesan cheese and lemon zest.
One word: uh-mazing.
What started as an accident became an intentional practice, and now it’s my favorite way to make broccoli.
Not only mine, as it’s pretty much the surest guarantee that Nephew and Niece will polish off an entire head of broccoli with dinner.

There are many reasons to love coffeecake, but the fact that you can eat it for breakfast tops it on my list.
It’s like someone — just like myself — clearly wanted to eat cake at 7AM but was never allowed to because, say, their mother never let them.
But with coffeecake it’s different. So different that when your mom tells you that you can’t have cake for breakfast, you can answer:
“Hush Mom, this is not cake, this is Coffeecake. It’s completely different, you’re supposed to eat in the morning with coffee!”

For someone who was all “Harrumph! There’s only one authentic recipe for Bolognese Sauce!”, I have some nerve telling you what I’m going to next, which is that I’m in love with an unapologetically 100% so-not-authentic Chinese recipe.
Actually, now that I’m thinking about it, this Honey Sesame Chicken is — just like General Tso’s chicken, wonton soup, hot and sour soup, sweet and sour pork, chicken balls, ginger beef, crispy beef, and lemon chicken — one of the quintessential American-Chinese recipes.
Dishes we think are Chinese but are considered foreign fare in China.

Happy New Year guys!
I know, I know, we are well into the new year but I took a week off to recharge so I haven’t had the chance to wish you a Happy New Year yet.
I hope y’all started the new year with a bang.
Mine has been very chilled out so far. Ski, delicious food, good friends, good books, and no alarm clock. I recharged my batteries and it was incredible.
Now I’m back and it feels awesome. I’m so open to all that 2017 is going to bring.
Like the Counting Crows sang:
I have plenty of exciting recipes I can’t wait to share with you guys.

Guys, I have a brand new crock-pot.
I found it under the Christmas tree, all wrapped by Santa Claus. How awesome is that?
But let’s start from the beginning.
About a month ago my old crock-pot died an unnatural death (I won’t tell you how though).
Since that day I felt lost and alone.
You see, I use my crock-pot many many times a week. I make a bunch of things with it: chicken tikka masala, pulled pork, roasted red pepper sauce, bolognese sauce, just to name a few.
I consider it one of the best inventions ever. I can't fathom going through a winter without a crock-pot.
So imagine how I was feeling. Mike without slow cooker -> disaster.

All I wanted to give you for Christmas was some chocolate mousse.
My logic was simple: Christmas means decadent meals and rich desserts. But in reality, more often than not, after a feasting on baked ham, roasted turkey, green bean casserole, mashed potatoes, stuffing, and gravy I find myself too full even for a cup of ginger tea, quite tired and, while we are being honest, like I need some Pepto and at least a solid 10k run.

What’s your ideal New Year’s Eve?
Mine is eating a delicious dinner with a group of friends at home.
Forget expensive venue tickets and long lines for food and drink. And don’t even get me started on New Year’s Eve in Times Square. I never go to Times Square unless I have guests.
To be honest, New Year’s Eve in Times Square is my own personal nightmare. Shoulder to shoulder masses, screaming drunks, and — worst of all — having to pee with no chance of getting to a bathroom just to watch the ball drop? No.Thank.You.
Partying at home with friends is definitely how I like to roll.
Cheaper, easier, and definitely safer than being out on the town.

If you’re anything like me, then you don’t eat purely for sustenance.
Delicious food makes me happy and sometimes even changes my perspective on life.
Then there’s the social aspect of food: a rally point for being together, either in preparing and cooking, or in enjoying the meal.
Nothing brings family and friends together like great food, especially during the holidays.
It’s hard to remember a holiday that didn’t involve gathering around a table.
Holidays are about spending time with family, embracing a new year, exchanging thanks and gifts, but more importantly, it’s the time for yummy food.
That’s right you guys, if there’s any time to indulge, this is it.
Everyone’s baking and holiday sweets are practically thrown in your face.
So why fight it, when you can enjoy it.

As you may have noticed, I’m not the kind of person who just throws together things in the kitchen without at least a map, a compass, 1001 enthusiastic reviews on AllRecipes or an old friend’s sworn solemn oath in written from, that a certain recipe is 100% guaranteed to blow my socks off.
Sure, I’ll make numerous adjustments while I work on something to meet my personal preferences, but aside from grilled chicken, eggs, and casseroles, I rarely go on my own intuition.
Because you see, my intuition has often led me to all kind of kitchen disasters: a strawberry pie that had exploded in the oven, a caldo verde that looked like vomit, Crock-Pot meat that was cooked to shoe leather, etc…
So, as you see, these days I tend to use recipes, possibly true and tried recipes.

Surely, you didn’t think I was going to let this year end without populating the broccoli archives with one new recipe, right?
I mean, sure, the Broccoli and Mushroom Casserole is still a star. The Creamy Broccoli Soup always gets raves. And so does Chinese Chicken and Broccoli.
But when you have a nephew that likes broccoli — scratch that — LOVES broccoli, you’re always on the hunt for new and advanced ways to prepare the beloved green cruciferous vegetable.
These days, I’ll find a recipe for a broccoli dish in a magazine and be like “Man I have to make this for Nephew!”
I’m such an awesome uncle, I should get a medal...

When I was a kid I always ate raw dough when my mother was making cookies (just as I ate raw cake batter). I used to beg my mother to let me have a whole bowl of cookie dough when she was making cookies — just for the record, my mother made the Toll House cookie recipe on the back of the chocolate morsels bag.
She never let me. I had to be content with spatula, the beaters, the bowl, and whatever I could spoon off with my finger when her back was turned.

If you know anything about me, I guess you know that my love for cinnamon runs deep as my love for soup.
I actually keep two different kinds of cinnamon in my pantry.
Yup, that’s right. I have two kinds of cinnamon — please, don’t act like you’re surprised.
It’s no mystery that I'm a spice freak. I have more than a hundred spices in my pantry and like to grind my own spice mixes using whole spices. I even broke two coffee grinders trying to grind spices in them before buying myself an (almost) professional Electric Spice-and-Nut Grinder, that grounds hard and soft spices and breaks them all down in a few pulses.

As a thank you for being a TIY reader I made you a batch of warm, fresh, Chocolate Chip Mini Muffins.
I know, how kind of me.
Did I mention they’re paleo, grain-free, gluten-free, refined sugar-free, and dairy-free?
Meaning you can definitely eat more than one. Two, three, four, maybe even five.
Yes, plan to eat muffinS, plural.

This time of the year, I’m thankful for memories of family and food that I loved as a kid.
For me, Mom’s Caramel Apple Blondies and cookies like these chocolate crinkles are a trip down memory lane.
Chocolate crinkle cookies were, and definitely still are, one of my favorites, especially during this time of the year.
There’s something about the dense, chewy, chocolate loaded goodness that I just can’t resist.
And the powdered sugar on my fingers and face reminds me of good ‘ol times.

If there was ever a good time of the year to get busy in the kitchen, this is it.

Being a healthy food blogger (and a triathlete) is a give-in that I exercise.
And I do. Every day.
Although there are times when I feel like I’m not doing all I can, I always manage to fit in some exercise: run, or swim, or cycle, or practice yoga.
The other night I felt especially accomplished after completing a 10 mile run, followed by a 45 minutes HIIT cardio and abs workout, and a gentle stretch yoga class.
So accomplished that I decided I deserved a special dinner, a carb-o-licious dinner (also known as carbageddon).

Okay, maybe I’m jumping the gun, but the store across the street from where I live has had Christmas decorations in their windows since October 23, so I think it’s perfectly fine to officially declare November the beginning of the holiday season.
I love the fall/winter holidays more than anytime of the year.
I know it’s a busy time of year — between decorating, cooking shopping, and celebrations — and it’s definitely easy to get overwhelmed. But nonetheless it's an awesome time, except of course my birthday.

If you follow this blog, you know I’m obsessed with football, and not only the games but also the food aspect.
I love having friends coming over to watch the game on Sunday and serve up some goodness.
But at the same time I don’t want to spend too much time in the kitchen getting ready for the kick-off.
Enters these Glazed Korean-Style Meatballs.
This is a recipe that always scores major points and though the ingredient list is long, the prep is minimal and the cooking is (mostly) done by an oven.
Which means I’m always ready for the coin toss and I never miss a moment of the action!

Can you believe that I’ve been eating this for dinner all week?

I’ve confessed again and again that I’m just not the kind of person who likes to eat things repeatedly.
Sure, I make this chickpea tikka masala more than I’d like to admit and also this sweet potato hash happens way too frequently.
I tend to get bored of the same food easily.
And though humans are creatures of habit, when it comes to cooking I feel the need to explore the less familiar.
What’s worse than food monotony?

This, my friends, is all the evidence you will ever need that you can never go wrong with Dijon mustard.
Because despite recovering from a horrible cold (not just any cold, more like the biggest, baddest and ugliest cold ever) with zero appetite, and even less inclination to walk to the kitchen and cook, an email from Mark Bittman dropped into my inbox the other day with a recipe for a super simple way to cook chicken thighs; so I dragged myself and made it for dinner last night and it was awesome.
Curative, even. I almost feel reborn today.
Apparently the delightful tang of Dijon mustard woke up not only my taste buds.

Can I get a “woot, woot” for green soup?
Anyone?
No, okay, okay, I get it.
Maybe green soup isn’t the sexiest food around or will get your stomach’s rumbling. But if there’s one thing I know is that this Green Machine Soup is a surprisingly delicious and velvety soup. And after eating one bowl you’ll feel like you just did something really good for your body.

In terms of pure comfort, casseroles are high on the list of my fave autumn cooking.
Double points if they have a good amount of cheese and triple if they also contain quinoa.
In fact, I’m stoked that the chilly weather has brought casseroles back into my meal rotation.
Big batches of Baked Spinach Rice or Cottage Pie not only make the kitchen smell like a million bucks on a Sunday night, but they become easy lunches and dinners throughout the week.
And if a couple of friends swing by, no prob — there’s always plenty to share.
On top of that casseroles don’t deserve their reputation of being heavy and loaded with cream and cheese — don’t get me wrong, they’re definitely delicious when they are — but they can be just as warming and yummy when filled with veggies.
So without further ado here are my 15 fave casseroles: filling, nourishing, and all delish. And trust me there’s not a single can of cream of chicken soup in sight!

But who really doesn't?
Who doesn’t dig a messy, delicious, and flavorful burger?
It’s America's quintessential comfort food and can now be enjoyed in an impossibly endless number of ways.

It finally happened. After months of good health and high spirits, one of my friends has infected me with the cold.
I hate getting colds because there's nothing you can do about it, except let it run its course. I hate getting food poisoning, I hate getting fevers, but I hate cold more.
Have you ever tried reading a book, watching a movie or working with a runny nose?
It is perhaps the most frustrating thing ever.
Just as you start to enjoy yourself, your nose begins to drip like a leaky faucet. Completely killing any enjoyment you have, as you proceed to wipe your nose again and again and again.
Torture.
Anyways, instead of feeling miserable and sorry for myself, I decided to take action and bolster my immune systems with food.
Believe it or not the most authentic way to fight a cold (or flu) is to eat foods that will help you build the healthy cells you need to feel better.
So I went in and selected 10 recipes from The Iron You to make when you’re sick. Most are smoothies, juices, and soups — because, as you have probably heard it like a million times, when you’re sick you need to get plenty of fluids.
And it’s true. The body needs extra hydration when you’re trying to get well.
But there’s also a grilled cheese. Trust me, there's nothing better to do on a sick day than to put cheese between two slices of (cauli) bread and call it a day.
I also included a recipe for popsicles as it’s my favorite remedy for a sore throat.
I hope you'll enjoy it!

There’s no doubt that one-pot meals are the best, easiest weeknight dinner solution, ever.
We can go even as far as saying that they’re almost a miracle when you need to cook but just don’t have the time or energy to do it.
Don’t feel like cooking? But look — it’s dinner in one pot!
Don’t feel like creating a pile of dishes? But it’s just one pot! (And a spoon, a plate, a fork, and knife but shhh, I don’t want to scare you off.)
Have a lot of friends coming over?
No more picking main, planning sides and veggies, running the stove, oven, and microwave at the same time. One pot and you’ve got a full-blown meal.
Everyone arriving at different times?
Don’t worry, one-pot meals are very forgiving of tardiness.

With so many mouths to feed, my mom did everything she could to stretch her dollar at dinner and keep her recipes simple.
That meant that a lot of our meals featured ground beef, from meatloaf to spaghetti to tacos to chili, there wasn’t a ground beef dish my mother didn’t have a recipe for.
And then there was my favorite of them all, Sloppy Joes.
The Sloppy Joes my mom made always included ground beef, onion powder, a Sloppy Joe seasoning mix, and potato rolls. The sides typically included an iceberg lettuce salad, on special occasions we would also get Ore-Ida french fries.

On the very long list of questions that I ask myself constantly and that I am convinced other people are never troubled with — “Where’s my phone?”, “Where did I put my keys?”, “What did I come into this room for?” — “What do I possibly have the energy to fix for dinner tonight besides fried eggs and avocado?” is near the top.

I LOVE Pecorino Romano cheese, like “truly, madly, deeply” love.
We have a long history together and we cannot help but to cherish one another.
To be honest I cherish it, I dunno if it shares the same feelings for me. I doubt it.
Anyhow, I love pecorino cheese because it makes my mouth pucker when I take a bite; it's so salty and sharp — I guess I must be really a salt fiend, whenever I’m grating it I always cut off a little chunk (okay, maybe a big chunk) and eat it straight.
So when I first saw Food & Wine’s September cover featuring a brilliant cacio e pepe pizza, as one does, my first thought was “Oooh, so hard to achieve outside a food styling studio pretty” (I mean, look at that beauty) followed by “Wait, cacio e pepe (a Roman dish with only three ingredients — pecorino cheese, black pepper, and spaghetti) on a pizza?”, followed by “Maybe that’s too much Pecorino?” (answer: no, there’s never too much pecorino cheese ) and then “I wonder how that would be on cauliflower crust? Does cauliflower pair well with pecorino cheese? And what about pepper?”
So many questions…

Last week was not my week in the kitchen, guys.
I had earnest, ambitious designs on a beet curry that would be pink and pretty and spicy and would finally put the word “end” on my quarrel with the red/purple root.
But as the week went on and as failures occurred — unnaturally purple, watery, and nothing like what I had in mind — my enjoyment of the project plummeted.
But because I’m one of those persons that no-matter-what follows through and finishes what he started, I did, and lo, it was acceptable, you know?
It’s just that I’m not a beet person and I can tolerate it only when juiced and I forgot?
None of this matter because the pot fell, spilling the curry. As I crouched on the kitchen floor scooping the curry into the garbage, I started questioning my life choices.
Why forcing myself to like something just because a bunch of other people like it?
I should know better…

One word: EPIC!
You may think that I’m totally exaggerating. I’m not.
These meatballs are so...so….SOOOOO delicious. Epic is the right word to describe them.
So good, they’re addictive. Once you’ve cooked them, and sampled one, you will wonder how there will ever be enough left for dinner.
Don’t say I didn’t warn you.

Bolognese sauce is a serious thing. As you may or may not know there’s only one true and authentic recipe for bolognese sauce — that the Italian Academy of Cuisine recorded and deposited with the Bologna Chamber of Commerce in Italy.
So it’s not like you can improvise and make your own bolognese sauce.
Or worse make a VEGETARIAN/VEGAN bolognese sauce. The horror!

Look, I know what you’re thinking. Cookie sandwiches on a (supposedly) healthy food blog?
Are you serious about it? How can you keep a straight face?
What can I say?
Sometimes a guy just needs his cookies and it was at such a moment on a recent afternoon that I made these Pistachio Chocolate Sandwich Cookies.

Have you made your own harissa yet?
Hopefully with the Sticky Harissa Chicken or the Harissa Spaghetti I was able to convince you that homemade harissa is the THING and something you really want (and need) to have in your refrigerator at all times.
If that wasn’t enough, then maybe this Lemony Harissa Potato Salad will do the trick.
