Spicy Tuna Pesto Pasta

October 28, 2022

Spicy Tuna Pesto Pasta

I’m a big fan of “pantry-friendly” recipes.
Though I have to admit that it’s kind of a vague term, since it doesn’t account for much of the diversity that influences what fills our cupboards.
But I’m pretty sure that in almost every household you can find a can of tuna, an onion, some tomato paste, olives, parsley, and oil.
That’s really all it takes to make this incredible Spicy Tuna Pesto Pasta.

(Vegan) Two-Tomato Pasta Salad

Two-Tomato Pasta Salad

I’ve been on a serious pasta salad kick this summer, and this Two-Tomato Pasta Salad just hit the spot.
Sun-dried tomatoes, fresh tomatoes, and tender pasta come together in this simple but oh-so-flavor-filled dish.
Inspired by some gorgeous cherry tomatoes that I found at the farmers’ market and by my fave sun-dried tomatoes packed in olive oil, this pasta salad comes together in 15 minutes.
A light yet filling meal that can be the perfect dish for a hot summer dinner or to bring to your next potluck or barbecue.

Avocado Egg Salad

We are going through difficult times and it might not always be easy to stay positive. Nonetheless we have to try our best.
As we hunker down at home, there’s no time like the present to get busy in the kitchen and try out some new delicious dishes.
I wholeheartedly believe that cooking is therapeutic, for yourself and for those around you.
Serve a delicious meal, everyone is happy. A simple source of comfort and pleasure.
It’s the kind of caring for the well-being of your family that ought to be top-of-the-mind right now.

Zucchini Pasta Carbonara

Zucchini Pasta Carbonara

Spaghetti carbonara is a classic pasta dish that the whole family loves and that takes as long to make as it does to cook the pasta. The ingredients are simple: Pasta, bacon, egg yolks, Parmesan cheese, a little olive oil, salt, and pepper. A silky sauce is created when the beaten yolks are tossed with the hot pasta and a little fat from the bacon. Luscious and wonderfully indulgent, pasta carbonara is as good as it gets.

Tomato Confit Pasta with Olives and Capers

Tomato Confit Pasta with Olives and Capers
I am fairly certain that I wait all year for tomato season, you know, the same way I wait for the Giants to get back to the field or for Apple to release its latest gadget.
I don’t know why I get so excited about tomatoes. It’s in my DNA, and I’ve learned to accept it.
I eat them on eggs, in frittatas, cooked and raw in every possible format and seriously, don’t even try to bring me a sandwich without a thin slice of tomato in it. Sister did it once and let’s just say, it didn’t go very well.

Spinach and Sun-Dried Tomato Zoodles

Spinach and Sun-Dried Tomato Zoodles
I know I haven’t made zoodles in forever, but with the official beginning of summer (i.e., Memorial Day weekend) I thought that some fresh and light crunchy zoodles paired with sun-dried tomatoes, spinach, and lemon juice would be the the perfect dish to celebrate the start of the hot season.

(Vegan) Creamy Chipotle Spaghetti

Okay seriously people, I can barely stand how delicious this is. It’s going to knock your socks off, roll them into a little ball, and return them to your sock drawer.
But it won’t blow your budget or your time, because you can make this in 15 minutes or less.
You in?
I love easy, quick, and delicious recipes that free up time for other things.
Having quick recipes you can get on the table in a snap is so helpful to anyone trying to juggle too many balls in the air. Which is pretty much everyone on earth nowadays. We are all so busy.

Spring Pasta Salad with Pesto and Peas

Spring Pasta Salad with Pesto and Peas

For someone who is manifestly terrified of all the offerings in the salad bar pasta salad universe — the tri-colore, mayo-drenched, provolone-loaded, pepperoni-laden, dotted with green peppers, raisins and more often than not sugar-sweetened (oh the horror!) — I surely have some nerve presenting you with a pasta salad recipe.
Truth is, I spend an incredible amount of time trying to come up with cold pasta preparations I’d find satisfying.
So far, I’ve been lucky just once, with my kale pasta salad. And though I love it and it loves me back (though I’m not exactly sure how a recipe shows its love) I felt it was not enough.

One-Pot Spaghetti with Kale and Cherry Tomatoes

One-Pot Spaghetti with Kale and Cherry Tomatoes

So, kale is good for us. We all know this.
It also tastes great. And there are many ways to prepare it: gratins, casseroles, salads, chips, pesto, smoothies, baked, with quinoa, et cetera, et cetera, et cetera.
In fact, I’m unwaveringly certain that the last thing this blog — let alone the internet — needs is another kale recipe.
But I can’t help it.
I made myself some fantastic spaghetti with kale last weekend and I couldn’t not share it.
It would be just rude to keep it from you. Because you and I have no cooking secrets and it should always be that way.

Quick Lemon Broccoli Pasta Skillet

Quick Lemon Broccoli Pasta Skillet

Surely, you didn’t think I was going to let this year end without populating the broccoli archives with one new recipe, right?
I mean, sure, the Broccoli and Mushroom Casserole is still a star. The Creamy Broccoli Soup always gets raves. And so does Chinese Chicken and Broccoli.
But when you have a nephew that likes broccoli — scratch that — LOVES broccoli, you’re always on the hunt for new and advanced ways to prepare the beloved green cruciferous vegetable.
These days, I’ll find a recipe for a broccoli dish in a magazine and be like “Man I have to make this for Nephew!
I’m such an awesome uncle, I should get a medal...

(Easy) Bacon Spaghetti Aglio Olio

(Easy) Bacon Spaghetti Aglio Olio

Being a healthy food blogger (and a triathlete) is a give-in that I exercise.
And I do. Every day.
Although there are times when I feel like I’m not doing all I can, I always manage to fit in some exercise: run, or swim, or cycle, or practice yoga.
The other night I felt especially accomplished after completing a 10 mile run, followed by a 45 minutes HIIT cardio and abs workout, and a gentle stretch yoga class.
So accomplished that I decided I deserved a special dinner, a carb-o-licious dinner (also known as carbageddon).
