(Vegan) Double Chocolate Pudding
Children and adults alike love chocolate pudding and have done so for years. Usually eaten as a snack, pudding can be also a refined dessert.
Though it’s easier to buy ready-made pudding (or instant pudding) sold in grocery stores, convenience stores, pharmacies, and even gas stations I urge you to try making it at home at least once.
It’s a hundred times better, way cheaper, and you can tweak to make it suit your tastes — more sweet, less sweet, more thick, less thick, and so on.

My Favorite Breakfast Sandwich
I love breakfast because it’s a way to sneak in a moment of quiet enjoyment before rushing off into your busy day. It’s an opportunity to take the time to eat something delicious and nutritious.
It’s also — without a shred of doubt — my favorite meal to cook, because there’s nothing fussy about it.
While most of the time I’m happy with a chia seed pudding or an energizing smoothie on some mornings I need something more, something more substantial, something like a breakfast sandwich.
Let me rephrase that, an AWESOME breakfast sandwich.

In my forced departure from chewable-food, I dusted-off some old recipes that I haven’t made in years and asked friends and family for their own recipes that don’t require heavy use of your jaws. Needless to say it, a large number of pudding recipes showed up in my inbox.
It’s funny that when somebody is in no condition to flex those cheek muscles to smile, let alone to chew food, pudding is the first thing that comes to mind.
Which hardly ever happens, pudding is not that popular. Seriously, when was the last time you had pudding? Or thought about pudding?

Just in case there was anyone still out there mistaking me for some sort of food nazi dictating what others should eat and what they should call themselves based upon their diets, you should know that when it comes to food I really don’t care about labels or semantics.
Sure, lots of my recipes (more like a ton, okay, maybe all) are labeled as this OR that OR this and that OR this but not that. But my one and only concern is that the the food is real food, made from fresh ingredients and - more importantly - that it’s delicious.
Take these 15 recipes for instance, they’re vegan (and almost all are paleo) but what matters is that every single one is so yummy you won't even realize they're healthy too.

The Internet is a strange (but awesome) place.
I’ve been at this blogging thing now for over four years and I still don’t understand many things that happen on TheIronYou (i.e., my blog).
I feel like I’m starting to know you guys better and that I’m able to predict the kind of recipes you’d like to see on here.
So I really don’t understand why one recipe goes viral while another one — that I believe is just as awesome — doesn’t.
It’s a mystery that I won’t ever really comprehend. I just have to accept it for what it is: some recipes become popular, others don’t. That’s just the way it is.
Still, when the Internet speaks, my job is to listen.

My Fave Breakfast Recipes


You probably already know that I’m not a morning person.
Never been. Never will.
I know that the way you start your morning off sets the tone for the entire day, but I’m not one of those persons who wakes up energized, refreshed, charged up, and ready to take on the world.
I, instead, wake up feeling grumpy and grouchy. I push the snooze button at least a hundred times. Seriously.

The only thing I love about mornings is breakfast.
Breakfast may be my favorite meal to cook because there’s nothing fussy about it.
Most of the time, I start my day with a fantastic smoothie (such as my awesome Immune-Boosting Blueberry Smoothie); sometimes I just want some solid food (apple + almond butter).
But then there those time when I want breakfast to be — you know — awesome, when that happens I turn to one of these ten recipes and start my day in the most legit way possible!

Wishing You All A Very Merry Christmas

I can’t quite believe it’s Christmas Eve and I’m here writing my Christmas blog post.
Roaring fires, good food, and the air filled with warmth.
Oh man, I love Christmas.

I love it even if every year at Christmas I'm reminded how bad I am at wrapping gifts.
The presents are usually “wrapped” in some sort of way and then I pile on the tape.
Tape is amazing.
Another option is the Tootsie Roll Twist — doesn’t matter the size or shape of the present.
If all else fails: Gift bag. Gift bags are magic.

Anyways, I’m also busy whipping up a feast for my family.
This year the menu includes a beef roulade stuffed with all sorts of delicious things (I know, awesome), Garlic Thyme Potatoes Anna, Baked Spinach, Maple-Glazed Butternut Squash, Chocolate Avocado Chia Pudding, et cetera, et cetera, et cetera.
I come from a large family where everyone loves to eat well (and drink good wine).
So yeah, a lot of pressure on Mike...

As I look back at the year gone by, there is one thing that stands out the most: YOU GUYS!

Because I know I can’t compete with your grandma’s green bean casserole, Aunt Mary’s velvety mashed potatoes, or cousin Jean’s super-rich stuffing.
And because I’m savvy enough to realize that you don’t need me to tell you how to choose, cook or cut a turkey — for that and a for any other Thanksgiving situation Martha is there for you.
This year I decided to skip Thanksgiving altogether and move directly to Black Friday.
You know, the busiest shopping day of the year — where we trample people for things we don’t actually need, the day after being thankful for what we have.
Also known as the day you wake up feeling like a bloated, elastic-waistband-wearing version of yourself.

If you know anything about me, then you are aware of my love affair with avocado.
I eat that stuff with a spoon, plain, or coated in coconut and baked into fries, or stuffed into meatballs, or scrambled with eggs.
And why not a smoothie, ice-cream or a pudding? It adds a filling, creamy texture that just cannot be beat. Plus, it ups the good fats as well as adding a small protein boost.
Not to mention brownies. Avocado boosts the fudgy factor, the healthiest, fattiest kind.

Hi, my name is Mike and I’m an addict.
No, this post is not about chocolate or cauliflower as you might assume, it’s about avocado.
What is it about this green fruit that makes me go crazy?
From salads, to hummus, pesto, brownies, mayo, scrambled eggs, ice-cream, pudding, fries, even cream sauce. I put avocado in and on everything.

I don’t think it’s a fad to go away though; because I don’t think it’s a fad anymore.

This week we’ve learned that weather forecasting is not an exact science. The predicted two to three feet of snow ended up being less than 10 inches of slush.
It’s not the first time (and it’s not going to be the last) that an anticipated snowstorm either does not happen or ends up being far less than advertised — the exact path of a storm is very hard to predict (though nowhere in the news was that point made!)
Perhaps the lesson is not to call something “the biggest snowstorm in the history” and hit the panic button, before it materializes.
Don’t get me wrong, I understand and appreciate the precautions for the worst case scenario.
The response of city officials was determined by the information they were being given by the National Weather Service. Which was that this was going to be a huge storm.
However, next time I suggest using caveats such as “it’s likely to”, “it seems like” or “there’s a chance that” when declaring a natural disaster, before it actually happens.

Fluffy Scrambled Eggs with Avocado and Feta
If I were to pick a food anyone can cook, I’d go with scrambled eggs.
From a 8-year old girl to a 98-year old gramps, everybody can mix a couple of eggs in a bowl, pour them into a quite hot buttered pan, and give them a brief stir with a wooden spoon.
It’s elementary.
However, almost 99% of the world population makes overcooked, dry, and lumpy scrambled eggs.
Scrambled eggs should be creamy, luscious, and custard-like instead. They should slip off your fork into your mouth, be light and creamy all on their own (without the addition of milk, cream or cheese).
Perfect scrambled eggs are amazing in their simplicity. I could eat them forever.
Then of course, if you like them dry, you’re probably more into fried eggs than scrambled eggs. But who am I to judge?

Vanilla & Honey Avocado Pudding


This pudding is the result of me being lazy or better yet, of me been completely swept away by the Olympics.
Like everyone else, Saturday morning I was glued to my TV watching US hockey team win over Russia. An amazing game decided in the shootout. [For the record: T.J. Oshie you've just made it onto my list of heroes!]
It was breakfast time and I wanted this chia chocolate mousse. But as I was about to start making it, I discovered I had no cocoa. I had hot chocolate powder, real dark chocolate, cocoa nibs, but no cocoa. A total impasse.
And leaving the apartment...let me rephrase that...leaving the TV, and that awesome Hockey game, to get cocoa? Not gonna happen.
So I went with what I had on hand and that was avocado, honey, vanilla, almond milk and chia seeds.

The chocolate/orange pairing is one that divides public opinion.
Some people don’t like it, others say it’s a small miracle in itself.
Personally, I’m on the fence about it.
At times the orange flavor is overpowering; on other instances, I feel the acidity alters the chocolate aroma (and not in a good way); but I can’t deny that when done right, the silky dark chocolate brightened by citrus fruit can be an outstanding combination. Worthy of any palate.

Chocolate Avocado Chia Pudding

We’ve all been there, just home from the Farmers’ market, fresh produce in hand, then comes the tedious first-world problem of having to store everything in your fridge.
That’s about when you realize you went overboard buying too much food. You couldn’t resist getting 2 pounds of Tuscan kale, 2 pounds of spinach, 2 pounds of heirloom tomatoes, 3 cauliflower heads, apples, grapes, berries and 7 avocados (yes, 7, one for each day of the week!)
You start what feels like a big game of tetris: piling tomatoes, aligning zucchini, bending kale, and filling the gaps with onions.
But no matter how good you are, by the end of the process half of the produce is still sitting on the kitchen table, and you’ve somehow grown a disdain for your mother for not having shown you how to do it — except that she had two fridges (at least) and maybe two freezers, and she didn’t really needed any logistical skills in this department.
So now you are left with but one option, and that is start cooking. Unless - of course - you own a flock of sheep or a herd of cattle, then you can feed the animals and you’re pretty much good to go. However, most of us don’t have that option, so we’re back to square one: cooking.
