(Easy) Thai Chicken Coconut Curry
Thai red curry paste is something I always buy and recommend you do too.
It’s a staple in Thai cuisine and is used in a wide range of dishes, from curries to soups and stews. It’s made by grinding together a variety of fresh herbs and spices, such as lemongrass, galangal, garlic, shallots, and chili peppers. The ingredients are blended together to create a smooth and fragrant paste that is spicy but more importantly full of flavor.
I generally use it in these Crock-pot Thai Red Curry Lentils, which are cous Steph’s favorite dish ever.

I honestly believe that the best way to cook lentils is in the slow-cooker.
I’m well aware that the most common method is to cook (or boil) lentils on the stovetop and that the fastest one involves a pressure cooker — but the slow-cooker method delivers the best results not to mention it is also the easiest way to cook ‘em.
Take these Easy Curry Lentils for instance, super easy to make and pack quite the punch in the flavor department. All the ingredients are placed in the Crock-pot for 7 hours and that’s it. You can forget about it.
What you’re left with are healthy and uber delicious lentils that are sure to satisfy even the most- die-hard meat lovers.

Shakshuka is originally a North African dish but over the generations it's become a signature dish across the Middle East as a substantial breakfast or lunch fare.
In the recent years, Shakshuka is taking America and Europe by storm being billed as a healthy dish.
Shakshuka can be seen in so many shapes and forms and today we’re making a vegan version of it, with chickpeas in lieu of eggs.
I’m not sure whether we can still call this dish Shakshuka since there are no eggs, but truth to be told chickpeas work like a charm in this recipe.
I will go as far as saying that you won’t miss the eggs in this vegan version.

Fact is, when I’m using the crock pot to save time (and stay out of the kitchen) I like to keep things as simple as possible, and believe me when I say that it doesn’t get simpler than this.

First of all, I need to say a big capitalized WOW!
I know this sounds a tad arrogant, but WOW is the only word that comes to mind to describe this (Vegan) Creamy Curried Butternut Squash Soup.
A rich, savory, and delicious soup that is also healthy, low calorie, and super easy to make.
And you know what? It tastes like it was simmered long and low in order to develop such depth, but in reality it takes about 30 minutes to make, from start to finish.
There are layers of flavor that will first tease your palate with butternut squash delicious savory notes. Next, you discover the wonderful sweet undertone of coconut milk, making it even more interesting. Lastly, you feel the curry with its unique blend of savory and sweet spices, but not overwhelmingly so.
All in all, perfectly a balanced and wonderful soup.

In my humble opinion lentils are perfect for curries: They pair perfectly with spices, help thicken the sauce, and cook down and get super soft and yummy.
