Easy Creamy Apple Chicken Curry


Today I have a great recipe to share with you. A mild and (super) creamy chicken curry that comes together in 30 minutes with ingredients you’ll likely have already in the pantry.
I mean: Chicken, onion, apple, oil, yogurt, milk (or cream), and curry powder. That’s about it.
A simple recipe, very easy to make and that’s perfect for kids and those who don’t like their curries too hot.

To Westerners, a simple chicken curry means a yellow curry made with that generic curry powder that we know all too well isn’t authentic but still a useful and delicious ingredient.
Let’s admit it, we all love a yellow curry.

What's really surprising about this recipe is how the apple melts (and helps in making a super creamy gravy) and completely disappears leaving behind all of its sweet juices; that help balance the slight acidity of the Greek yogurt and are a perfect complement to the curry powder.
I like to use plain Greek yogurt and milk to make but you can sub them with full-fat coconut milk, your call.

Ingredients
Serves 4

Note: yogurt and milk (or cream) may be replaced with coconut milk, of course the curry will taste more coconutty.

1 lb / 453 chicken breast, cut into 1-inch cubes
2 tablespoons vegetable oil
1 small onion, finely chopped
1 medium apple, peeled, cored, and cut into small cubes
1 (5.3 oz / 150 gr) container plain Greek yogurt (or plain yogurt)
1 tablespoon curry powder
½ teaspoon salt (adjust to taste)
2 tablespoons milk (or heavy cream)

Directions

Heat the oil in a skillet over medium-high heat. Add the onion and sauté for 6 minutes, until translucent.
Add chicken and apple and sauté on high heat for 8 minutes, or until the chicken begins to brown.
Lower the heat, add Greek yogurt, curry powder, and salt and cook for 15 minutes stirring every so often. The apple should have melted into the sauce at this stage and the yogurt will curdle a little, that’s okay.
Add milk (or cream), give a good stir, take a taste, and adjust seasoning as needed. Serve.
