Green Goddess Turkey Burgers
I’ll say it before you do. Turkey burgers can be pretty blah.
Sure, they’re lower in fat and calories compared to the traditional ground beef burger; but it takes just one bite of a lifeless and dry turkey burger to make you miss the beef counterpart so very much.
I’ve been there many times — more than I’d like to admit.
But when turkey burgers are spiced excellently and tender and juicy, they’re awesome in their own right.
Add zucchini or apple to ground turkey and you’ve got something really good going on. So good you ever wondered why you doubted turkey burgers in the first place.

The recipe hails from Food and Wine Magazine. I went on and on about my love for this magazine, and it hasn’t abated. I don’t think it ever will.
In fact, now I even get a weekly dose to make my dinner feel inadequate swoon over.
I spotted these Green Goddess Turkey Burgers in the latest July issue, also known as the Chef Issue — the equivalent of Vogue September issue in the food world.
It took me way too long to make them.
I mean, grilling season is far from over, but it’s better not to linger. It's hard to barbecue when there've been 2 feet of snow and ice covering your BBQ for several weeks.

The curious thing about this recipe is that it uses mayonnaise in the mixture.
Never in my life I would have thought of using mayonnaise inside a burger mixture. I guess that there’s a first time for everything.
The thing about mayonnaise is that it can show up anywhere.
Here it is cementing your sandwich together. There it is thinned into dressing, drizzled over your salad. You dunk fries in it, you mix it with Sriracha to have the best sauce ever known to mankind.
But mixed with ground meat? That’s a first. At least to me it is.

Turns out mayo mixed with ground turkey makes for some very moist and juicy burgers.
Add a bunch of green stuff and you’ve got some delicious Green Goddess Turkey Burgers.

Green Goddess Turkey Burgers

Barely adapted from Food and Wine Magazine

Ingredients
Serves 4

1 ½ lbs / 680 gr ground turkey
⅓ cup finely chopped basil
⅓ cup finely chopped scallions
⅓ cup finely chopped parsley
1 tablespoon minced anchovy
4 tablespoons mayonnaise (make you own paleo mayonnaise with this recipe)
1 teaspoon fine grain sea salt
½ teaspoon ground black pepper

Directions

In a large bowl gently stir the burger ingredients, using a fork.
Divide mixture into four and with dampened hands shape into patties, firmly pressing the mixture. Transfer to a plate.
To form patties that cook evenly, use 2 plastic lids from 1-quart takeout containers and press down one fourth of the turkey mixture to flatten.
Heat a grill or a grill pan to medium-high (if you’re using an outdoor grill lightly oil the grill grates). Grill the burgers, turning once, until cooked through, about 10 to 12 minutes.
Serve with your favorite toppings.

Nutrition facts

One burger yields 350 calories, 24 grams of fat, 3 grams of carbs, and 31 grams of protein.

  1. Indeed, I love poultry burgers (if eating them once in a year could be considered love). But you're right that they could easily dry out. I don't have any concerns about these bad guys, though. And I do love the herbs and anchovy - great addition. Stop, I've got concerns, I think. Send me a few ASAP, please. I need to try them and approve.

  4. Mayo in turkey burgers is a first for me too!!! And, so is minced anchovy in turkey burgers! I am intrigued indeed! I saw these on IG earlier today and they sure do look so moist and tender and AWESMAZING!!!!

    the other day I made a turkey burger with cooked eggplant in the mix, and it turned out so good, but I did not take a picture, will have to re=visit it...

  12. What an interesting idea to include mayo in the burger. I guess it makes sense if you think about it. I'm sure you've seen those 'mayo cakes' out there that rely on mayo for moisture. (Sounds pretty terrible to me...but that's just me.) I will actually go as far as to say that turkey burgers (when done right) can rival a good beef burger. And these look like they've been done right, Alpha. Well done! #WolfpackTurkey

  17. These look and sound great, could you use anchovy paste in lieu of chopped anchovy? I only keep this in the fridge for a Cesar dressing I make, I dont like seafood.
