Curried Chickpeas

November 23, 2018

Curried Chickpeas

This recipe come from Joan’s on Third, a specialty food store and restaurant located in West Hollywood, Los Angeles. A great little place with a refreshing yet comfortable atmosphere and a great menu selection.
I am obsessed with the curried chickpeas at Joan's on Third. They are the best curried chickpeas ever. I’ve been there three times and every single time I’ve ordered them as part of the salad trio (a selection of three salads from their daily specials on the marketplace menu). But truth to be told I should order just the chickpeas because they're all I ever want to eat (well, that and the carrot cake.)
Luckily for me, I found the recipe on the LATimes and I was able to recreate it home — meaning that I don’t have to fly to LA if I get a curried chickpeas craving.

Crock-Pot Chicken Teriyaki

Crock-Pot Chicken Teriyaki

Chicken teriyaki is probably one of the most well known and liked Japanese dishes in the US and for sure one of the classic takeout recipes we all love.
Most people don’t think about making it at home because they either have a restaurant they love or because they buy teriyaki sauce like they buy ketchup.
But I do love making it from scratch.
In fact I have not one, not two, not three, but four different recipes for chicken teriyaki on this blog: Baked Honey-Teriyaki Chicken, Teriyaki Glazed Chicken Kebabs, Beer-Flavored Chicken Teriyaki, and Pineapple Teriyaki Glazed Chicken Skillet
And today I have a fifth.
*drumroll please*
Crock-Pot Chicken Teriyaki -> one word: uh-mazing.

The Best Maple Cinnamon Baked Apples

The Best Maple Cinnamon Baked Apples

In my opinion baked apples are great treat on a cold evening or any other evening really and they make a healthier alternative to the usual dessert fare — a cookie, a brownie or a bit of chocolate.
My mom used to make them every so often during fall and winter when I was a child. I remember eating them hot from the oven with a scoop of vanilla ice-cream or some yogurt on top. Nothing fancy but so very delicious.

Italian Farro Salad

Italian Farro Salad

If you’re not familiar with it, farro is a grain similar to pearl barley, but it’s dried in such a way that instead of being fluffy and spongy, it becomes a bit chewy and has an incredible nutty flavor.
Farro is a pure form of wheat with the husk intact.
It’s been a staple in the Mediterranean diet for centuries, in fact it was a major food for the ancient Romans, who used it to make bread and soups before shifting to wheat.
It’s incredibly versatile and pretty healthy too. It contains a lot of fiber which proves to be very good when it comes to digestion and cardiovascular health. It’s also exceptionally high in protein for a grain and supplies more than 10 different vitamins and minerals.
It used to be pretty hard to find, but nowadays almost all grocery stores carry it. From Trader Joe’s to Whole Foods to Walmart, look for it in the natural-food or special selection sections.

Marinated Red Peppers with Garlic and Oregano

Marinated Red Peppers with Garlic and Oregano

Most of the time, I don’t choose the recipes I share here, it’s the market that controls it.
As it happens when you live in a climate that deprives you of field-fresh produce for almost half the year, leaving you to go completely out of control and of course overdo it in the months that you’re graced with it — bringing home buckets of fresh produce when you only need a fraction of it.
The other day I picked-up some mega-huge red peppers thinking about pickling them, but then I changed my mind — as I often do— and I instead roasted them.

Socca (Gluten-Free Chickpea Flatbread)

Socca (Gluten-Free Chickpea Flatbread)

Let’s talk about socca, shall we?
For those of you who are not familiar with this food, socca is a sort of large flatbread (or unleavened pancake if you prefer) made with chickpea flour, water, olive oil and seasoned with salt and pepper.
It’s a popular street food along the French Riviera and in and around the province of Genoa, Italy. It's traditionally cooked in wood ovens on copper disks, roughly cut, and served hot.
It’s a great any-time-of-the-day recipe that can be enjoyed in so many ways.
Socca is often served as an appetizer with a few herbs and spices and eaten with the hands with a glass of crisp rosé. My favorite way to eat it is with hummus or harissa: so delicious!

(Vegan) Coconut Curry Chickpeas

Crazy week? It can be all too easy to throw healthy eating out of the window and chow down on some takeaway.
With busy life comes the desire to feed oneself all that is easy, quick, and effortless.
But don’t dive into that pizza, Pad Thai or Chipotle just yet.
I have a perfect recipe for you.
So easy and simple, you’ll have dinner sorted in no time.
And if you make a double batch, you’ll have lunch for the next couple of days too.

Crock-Pot Mongolian Beef

Crock-Pot Mongolian Beef

One of the most fundamental, basic rules of dinner parties — and the one I routinely ignore — is that you should never try out recipes for the first time on your guests. Good manners predicate that guests are not guinea pigs, hence you should never test new dishes and ideas on them.
But when those guests are your family — which means that they are forced to love you — I say go to town on them.
Fortunately, with this Crock-Pot Mongolian Beef everything worked perfectly, like I knew it would. Soy sauce, ginger, garlic, sugar, and beef in the slow cooker: Hardly something can go wrong.

Easy Indian Butter Chickpeas

Easy Indian Butter Chickpeas

Since you all know me, then you know that I love Indian food to the utmost.
Give me some Chicken Tikka Masala, Butter Chicken or Pumpkin Masala and I’m one happy camper.
In fact, some of the most popular recipes on this blog are Indian-inspired; such as the Chickpea Tikka Masala or the Red Lentil and Spinach Tikka Masala — maybe not quite like your grandmother’s authentic Indian recipe but so tasty nonetheless.

Easy Zucchini Gratin

Easy Zucchini Gratin

There is something rather awesome about vegetable gratins. You start out with ingredients that are usually not considered healthy — a memorable pile of shredded cheese, heaps of crème fraîche, butter — but then you add a glorious amount of veggies to the equation and the result is a pretty healthy dish. Because if there is a vegetable in it, it must be healthy food, right?

Crock Pot Shredded Beef Ragu

Crock Pot Shredded Beef Ragu

Ragu is one of those recipes that really showcases the beauty of Italian cooking: everyday ingredients, fast prep, long and slow cooking until you get a luscious dish that tastes like a million bucks.

One Pot Pizza Rice

One Pot Pizza Rice

I was not, in fact, looking for a new rice dish. I have already so many, I certainly do not need one more.
But, as it happens, because I’m terrible at timely meal-planning, I was attempting to make this chicken for dinner a couple of weeks ago and it wasn’t ready on time, or even close to it.
That’s when I remembered a one-pan Spanish rice I made in February that was both delicious and easy to make.
Realizing I had almost all the ingredients on hand, I rustled it up. But since I had Nephew and Niece over for lunch, I made a few tweaks (no spices, marinara sauce instead of tomato sauce, etc.) and what began as Spanish flavored rice ended up looking much more as a tomato rice that smelled like pizza.
So I took it a step further, sprinkled some mozzarella I had in the fridge, dotted with mini-pepperoni slices, five minutes under the broiler and BOOM a delicious One Pot Pizza Rice.
The kids loved it so much they asked for seconds, and thirds. Actually, they polished it ALL off.

(Vegan) Creamy Curried Butternut Squash Soup

(Vegan) Creamy Curried Butternut Squash Soup

First of all, I need to say a big capitalized WOW!
I know this sounds a tad arrogant, but WOW is the only word that comes to mind to describe this (Vegan) Creamy Curried Butternut Squash Soup.
A rich, savory, and delicious soup that is also healthy, low calorie, and super easy to make.
And you know what? It tastes like it was simmered long and low in order to develop such depth, but in reality it takes about 30 minutes to make, from start to finish.
There are layers of flavor that will first tease your palate with butternut squash delicious savory notes. Next, you discover the wonderful sweet undertone of coconut milk, making it even more interesting. Lastly, you feel the curry with its unique blend of savory and sweet spices, but not overwhelmingly so.
All in all, perfectly a balanced and wonderful soup.

Easy Blackened Chicken

August 11, 2017

Easy Blackened Chicken

First off, let’s make things clear: Blackened chicken is NOT the result of burning your chicken, or cooking it too long, or from it sticking to the pan.
No, the blackened part of the chicken is the result of a mix of spices and herbs (paprika, salt, cayenne pepper, cumin, thyme, white pepper and onion powder) that coats the chicken and when put to high heat, gives the chicken an outer char.
Usually the coated chicken is seared on a smoking hot skillet to create the blackened effect and then it finishes cooking in the oven.
But in an effort to simplify the cooking process, I skip the ‘smoking hot skillet’ part and instead cook the chicken under the broiler.
It gets a little less blackened but the taste and texture are there, believe me.

One-Pot Cheesy Beet Rice

August 9, 2017

One-Pot Cheesy Beet Rice
After I posted the recipe for the One-Pot Creamy Garlic Zucchini Rice three weeks ago, Mark @JerseyStylePhotography asked me if I have ever tried making it with beets instead of zukes.
Since I’m not very fond of beets — despite a recipe for chocolate beet cake and one for beet juice on this blog — my answer was of course “No”.
I mean, why on earth would someone ruin a perfectly good recipe with beets?
What a crazy idea...

Simple Maple Vanilla Roasted Plums

July 24, 2017

Simple Maple Vanilla Roasted Plums

Okay people, this is barely a recipe.
It’s more a suggestion of how to best celebrate the incredibly sweet plums.
Since I was a kid I loved plums. Red plums, black plums, yellow plums, and even green plums.
When ripe, plums are wonderfully sweet with a rich, complex flavor. They are a convincing argument that fruit is the best candy there is.
So sweet, so juicy, so tender.

One-Pot Creamy Garlic Zucchini Rice

One-Pot Creamy Garlic Zucchini Rice

People, the season of zucchini overabundance is officially here.
The other day I came home from the farmers market with so much zucchini the overflow from the refrigerator filled a big bowl on my counter.
Don’t get me wrong, I wasn’t scared at all. For many the summer mantra is “too much zucchini”, but my attitude is: Bring ‘em on.
I love zucchini so very much. It’s one of the most wondrous ingredients available and a gift to the seasonal cook.
Zoodles, casseroles, patties, fritters, frittata, even a grilled cheese. You can do anything with zucchini!

Simple Zucchini Chorizo Frittata

Simple Zucchini Chorizo Frittata

I went ahead and make you a perfect lunch for today.
Except I ate it. All. It was too good to resist.
So eventually if you could make your own lunch today, I think that it would definitely be best.
I’ll tell you what to use, how to cook it, and the reasons why you should cook it. I won’t go as far as cooking it though. Because I will eat it all.

(Vegan) Persian Eggplant Stew

June 7, 2017

(Vegan) Persian Eggplant Stew
A thing I have learned over the last 5 years here (has it been that long already?) is that people have very strong opinions on eggplant.
Some find it to the be awesome, especially when it’s spicy or paired with tomato sauce, others just don’t care about it, and no matter what you do with it, they’re never going to be converted.

Crock-Pot Chicken Barbecue

Crock-Pot Chicken Barbecue

Man this was great!
The shredded chicken is fall-apart tender and the sweet tangy flavor of the sauce bursted in the mouth.
YUM!

Not to mention this is arguably one of the easiest BBQ chicken I’ve ever made.
You know those times when you don’t have time to stand over the stove and want to cook something delicious with the minimum of fuss? this Crock-Pot Chicken Barbecue is going to save your life.
Throw everything in the slow cooker without any special prep and let it work its magic.
