Almond-Chocolate Skillet Brownie




What do you hate with a burning passion?
I know hate is a strong word, but what infuriates you the most?
I have a couple of favorites.
For instance, lately I’ve been having huge problems with my phone’s autocorrect. It’s been acting up on me and I have the distinct feeling that it’s trying to sabotage me.
The other day I tried to type “welcome back” to my friend and it corrected to “suicide neck” (what is a suicide neck btw?)
Also it changes “well” to “we’ll” and “their” to “they’re” all the time. So small but so infuriating.
I know the savvy thing to do would be to turn the autocorrect off.
But I have this love-hate relationship with it. Half the time it works, half the time it butchers everything. That good half is the only thing that keeps me from turning it off.

Another thing that bothers me is groups of people who walk slowly in a tight pack and take up the entire footpath.
Or worst, people who just stop in the middle of a sidewalk, with no regard for anyone around them.
It happens all the time and when that happens, I want to slap these people upside the head.
When you live in a crowded city where the sidewalks are busy, if people don’t move you’re forced to walk on the side of the street by the cars risking your life .And let me tell you, that’s not funny.

Lastly, I hate people who clap when the airplane lands. Seriously.
I’m scared to fly, you’re probably scared to fly as well. But it’s the pilot job to bring the plane down safely, he knows what he’s doing.
You don't clap when the waiter brings your food, you don't clap when the doctor finishes suturing up your wound, you don't clap when an accountant balances your chequebook.

One thing I don’t hate is a gluten-free, grain-free brownie that comes together in 5 minutes flat.
A brownie you need only one bowl and one skillet to make.
A brownie that is so easy to make, you could make it for no other reason than to just eat some chocolate.
A brownie that can be labeled as paleo, primal, healthy, clean eating, whatever, but the only thing that matters is that it’s (un-sinfully) delicious,
I'm sure you'll love it too!

(Paleo) Almond-Chocolate Skillet Brownie                                                             Print this recipe!

Ingredients
Serves 2

5 tablespoons almond flour
3 tablespoons cocoa powder
3 tablespoons raw coconut palm sugar*
1 teaspoon baking powder
¼ teaspoon fine grain sea salt
3 tablespoons water
2 tablespoons butter, melted (or coconut oil)
1 large egg
¼ teaspoon vanilla extract
1 tablespoon dark chocolate chips

*use regular brown sugar if you don’t care about the paleo thing

Directions

Preheat oven to 325°F (160°C) and place a rack in the middle.
Lightly grease a 6-inch cast iron skillet (or an oven-proof skillet or a casserole dish).
In a bowl, whisk almond flour, cocoa powder, sugar, baking powder, and salt.
Stir in water, melted butter (or coconut oil), egg, and vanilla extract until well combined.
Bake for about 13 to 14 minutes, until puffed but not set (the brownie should jiggle a bit in the center when shaken.)
Serve warm with whipped coconut cream, regular whipped cream, or your favorite ice-cream.

Nutrition facts

One serving yields 371 calories, 27 grams of fat, 33 grams of carbs, 9 grams of protein.

  2. omg. When I landed at JFK, I thought some celebrity had got onto the plane or something, people were throwing a party- I'd never seen it before! Anyway, this recipe clearly is something not to hate, and once again, you got the serving size wrong. It's for one.

  3. I turned off the auto-correct in my phone because I use Whatsapp in English and Portuguese, as well as eventual emails in Portuguese too - the darn thing goes crazy and it is almost impossible to use it when it tries to correct every single word

    but even in English it was too annoying - the straw that broke the camel's back was my text to a graduate student - I wanted to say "wait a sec" but it went as "wait a sex"

    not too bad, but still embarrassing... I said goodbye to it, and been living happily since ;-)

    great cake, I should bake some but not for a little while - need to recover from certain excesses of a recent past

    2. Glad the student has great sense of humor so we both laugh about it... ;-) the other thing that is very annoying is that Whatsapp will place the last person you had a chat with on top. More than once I sent a message to Phil, but it went to one of our grad students... So far, no major harm done, but WOW! One can get in trouble easily these days... ;-)

  4. Can relate to all of the above, especially the clapping when you land, really? What the heck is that about. Another for me are the "grazers" who nibble on all the freebies at stores like Costco or Sams Club. It's not a restaurant people and move your damn carts out of the middle lane. It's like they are pushing their carts, smell something and wander off in a daze while the cart stays where they left it. Insanity! Like this beauty made for one! Love this brownie and made with almond flour, yum!

  5. Do people still do that? Clapping I mean? I thought it was banned... :) And I am right there with you on the autocorrect... I'm typing this on my iPad. Same thing... Sometimes it works, sometimes it makes horrible words out of the most common things..
    Now this brownie... That is certainly not in need of any correction. Looks delicious!

  8. I HATE AUTOCORRECT TOO. it always turns my proper English words into not-real words. It makes zero sense.
    But what does make sense is face planting into this brownie because it's Friday, and chocolate is necessary. Pinned!

  9. Oh, autocorrect! I have a love-hate relationship with that thing, too. It can allow me to type faster while my fat fingers mash all the wrong letters...but they it can just screw up what I'm trying to say. (I've also made 3 types so far in leaving this comment. Can you add autocorrect to your blog comments please?) So I've noticed that the "we'll" vs "well" thing will fix itself based on what you continue to type. It's like your phone figures out that you want a verb, so it adds an apostrophe. I think my phone is stalking me. But let's talk brownies. As in, send me this skillet brownie and well continue being friends. #WolfpackBakes

  10. Hilarious. I probably will be beaten up badly. I confess, I was one of those giggly girls who stops and chats in the middle of a street and realizes later. Ok, I don't do it now. The autocorrect is freaking crazy, I don't hate, I enjoy it. The other day my friend typed 'because' and guess what mr autocorrect did?..you won't believe it..;)
    Anyways, I love this skillet brownie. I need to make them asap. Pinning.

  11. OMG Mike, this looks so good! Cannot wait to try this.......today!! LOL

    As for the whole "thing you hate most" I really have to agree with you on the whole bottle necking thing, which I also fondly refer to as cluster f***ing! It's really annoying in the grocery store because the aisles are only so big. You get two or more people who think they HAVE to walk side by side and they block the whole aisle, or they walk in the middle and just stop and walk away from there cart and nobody can get by. Very inconsiderate.
    My auto-correct on my phone bugs me too, but like you said, it works half the time so I don't want to shut it off.
    The third thing that really bugs me is people who ride your bumper when you're driving. I don't drive slow or even the exact speed limit. Does anybody really??? I usually drive a couple over the actual posted limit, so when someone is behind you, on your a** like they're in an all-fire hurry, it's not only annoying and irritating, it's extremely dangerous. Some people just don't have any consideration for the safety of other people around them.

  14. DUDE!!!!!!!!! You have no idea how big of a YES I yelled about the pilot thing. I say that EVERY time I fly and we land. And I say it out loud. Why are we clapping? At the end of every music lesson I teach in school, do my students clap for me? Nope. After every post you publish, do I clap for you? Well... yes, actually... because recipes like these are awesome and deserve praise! But someone just doing their job and what they are paid to do. Heck no. Ahhhh, SO happy you wrote that. Totally made my day!

  15. Seriously delicious. In case anyone else doesn't have a mini skillet, I tripled the recipe and used my regular cast iron skillet (maybe a 10" or 12", i'm not sure) and baked for 18 min. Topped with fresh whipped cream and homemade paleo caramel sauce. Heaven in my mouth! Nice work!
