Let’s also add that you want some healthy, tasty, filling, and that involves a good amount of veggies. Well my friend, then this might be just the right recipe for you.

To be completely honest this is more of an idea than a recipe. There’s hardly any cooking involved. Even if you don’t possess any skill in the kitchen, you’ll be able to make these zucchini pizza bites. Promise.

All you need is a chopping board, a knife, one spoon, an oven, a baking sheet and a short list of ingredients. And in about 6 to 8 minutes you’ll be able to serve this awesome snack.

Zucchini Pizza Bites
I really looove these zucchini pizza bites. They’re so good. Actually, I didn’t expect them to be this good. A perfect way to use up all the zucchini in your fridge and satisfy your craving for pizza in a low-carb way.
I believe I will be making these all the time from now on.

Ingredients
Serves 4 (about 60 bites)

2 large zucchini, sliced into ¼-inch thick rounds
⅓ cup tomato sauce
⅓ cup shredded mozzarella
2 tablespoons olive oil
Fine grain sea salt
Ground pepper
Fresh basil

Directions

Preheat oven to 380°F (200°C). Line a baking sheet with parchment paper.
Lightly coat with olive oil both sides of zucchini slices and arrange on prepared baking sheet.
Season with salt and pepper and bake in the oven for 2 minutes. Take out of the oven, flip zucchini slices with the help of a fork (be careful not to burn your fingers) and bake in the oven for another 2 minutes.
Take out of the oven and top with ½ teaspoon of tomato sauce and a pinch of shredded mozzarella. Turn on the broiler and bake for an additional minute, until mozzarella is melted but not burned.
Top with fresh basil (or any other topping of your liking) before serving.

Nutrition facts

One serving (about 15 slices) yields 95 calories, 5 grams of fat, 1 gram of carbs and 2.1 grams of protein.
