Frosted Grapes


With Christmas just around the corner (I can’t believe it’s already that time of the year), I wanted to share an extra special snack that is a staple in my house since I was a kid: frosted grapes or as niece like to call ‘em Elsa’s Frozen Grapes (believe it or not, after 4 years Frozen was released she still looooves it!)
Seriously, is there anything more festive than these sugared grapes?
Not only they are a yummy snack but you can use them as a decoration to your holiday desserts. Imagine a classic white layer cake topped with these grapes. It's pretty awesome if you ask me.

(Easy) Spinach Ricotta Quiche


I am certain that for many of you — just like myself — the sole preoccupation right now is Thanksgiving menu and that you probably forget — just like myself — that in order to survive and make it to Thursday alive you still need to eat.
That’s why I have a little recipe for you today, a fantastic quiche that
(A) requires a few simple ingredients,
(B) is incredibly easy to make,
(C) is perfect for breakfast, brunch, lunch or dinner, and
(D) last but not least, is super delicious and wholesome, while being healthy and nutritious.

Blackberry Mint Iced Green Tea


At this point you are well aware that I love making my own iced teas and adding different combinations of fruit and fresh herbs.
So far I’ve made Rosemary-Peach, Raspberry Mint, Ginger Mint, and even a Lemon Sparkling Iced Tea.
And today I present you with some awesome, super refreshing Blackberry Mint Iced Green Tea.
Because the heat wave we’re currently experiencing in my neck of the woods is a double-whammy (with high heat and high humidity) and one of the most effective ways to cool off is to sit in the cool shade and drink a tall glass of iced tea.
Or at least that’s what I like to do!

Green Tea Lemonade


For reasons I can’t fully understand, if you show up at a 4th of July barbecue with pitchers of freshly-squeezed lemonade, you’ll be greeted and revered; but if you show up with the same pitchers of freshly-made green tea lemonade, people will actually flip out.
Why is green tea lemonade far more exciting than regular lemonade? It is a mystery to me as well.
But that’s what happened the day before yesterday at a friend’s Fourth of July party.
Along with other food items I was asked to bring lemonade.
I thought about bringing Cherry Lemonade, Peach Mint Lemonade, Blueberry Lemonade or just regular yellow pale lemonade. But then I thought about this Green Tea Lemonade — I make all the time — and how delicious and simple to make it is.
I gave it a shot.
And you know what?
People raved about it and many asked for the recipe. 
So here it is.

Happy 4th of July people!

The Fourth is by far one of my favorite holidays of the year. Outdoor parties, food, family, friends, parades, fireworks. It all makes for a perfect day.

If you live in the U.S. enjoy this awesome day. Hopefully there will be plenty of sunshine, great food,  great people and, why not, a bit of booze too. If you’re living elsewhere, I hope you still have an awesome Tuesday.

Honey Glazed Chicken and Veggie Kabobs


Kabobs or skewers? I call them kabobs but I’ve noticed a lot of people say skewers.
It really doesn’t matter, but these Honey Glazed Chicken and Veggie Kabobs do matter.
Actually they’re the only thing that matters to me right now.
Chicken, zucchini, bell peppers, and onions marinated in zesty bath of oil, honey, soy sauce, and garlic.

I know, I know, “Mike, what’s up with putting up a iced tea recipe two days after an awesome long holiday weekend?
But wait, I think you’re coming at this from the wrong angle; this Mint & Ginger Iced Green Tea is, in fact, three days early for next weekend and just in time for the summer heat.
Because we all know that a tall glass of iced tea, dripping with condensation, is an icon of relief from the summer heat. It quenches the thirst and satisfies the desire for flavor like no other drink.
All you need to do is pull up a reclining chair, sit back, relax, and sip away.

Most of the time, I like to cook for others. I like to cook things that I know (or hope) others like. Then, when I pulled it off and they tell me how great it tastes, I feel awesome. It’s an accomplishment.
I’m fairly certain that this has something to do with deep-rooted need for validation. Something I don’t go out looking for it, but that I do very much appreciate — especially in the cooking department.
It probably stems from something my parents did when I was young. Trust me, it’s always their fault. HA!

For someone who is manifestly terrified of all the offerings in the salad bar pasta salad universe — the tri-colore, mayo-drenched, provolone-loaded, pepperoni-laden, dotted with green peppers, raisins and more often than not sugar-sweetened (oh the horror!) — I surely have some nerve presenting you with a pasta salad recipe.
Truth is, I spend an incredible amount of time trying to come up with cold pasta preparations I’d find satisfying.
So far, I’ve been lucky just once, with my kale pasta salad. And though I love it and it loves me back (though I’m not exactly sure how a recipe shows its love) I felt it was not enough.

Now, I know what many of you are thinking.
Has he lost his mind? Polenta goes great with all kinds of meats and sauces what does it have to do in a cake?
Hold on a sec, and hear me out: Polenta makes for an excellent substitute for flour in cakes and in turn makes them naturally gluten-free.
Plus polenta gives an awesome yellow-sunshine color to cakes and also gives a wonderful texture.

All I wanted to give you for Christmas was some chocolate mousse.
My logic was simple: Christmas means decadent meals and rich desserts. But in reality, more often than not, after a feasting on baked ham, roasted turkey, green bean casserole, mashed potatoes, stuffing, and gravy I find myself too full even for a cup of ginger tea, quite tired and, while we are being honest, like I need some Pepto and at least a solid 10k run.

What’s your ideal New Year’s Eve?
Mine is eating a delicious dinner with a group of friends at home.
Forget expensive venue tickets and long lines for food and drink. And don’t even get me started on New Year’s Eve in Times Square. I never go to Times Square unless I have guests.
To be honest, New Year’s Eve in Times Square is my own personal nightmare. Shoulder to shoulder masses, screaming drunks, and — worst of all — having to pee with no chance of getting to a bathroom just to watch the ball drop? No.Thank.You.
Partying at home with friends is definitely how I like to roll.
Cheaper, easier, and definitely safer than being out on the town.

 If you know anything about me, I guess you know that my love for cinnamon runs deep as my love for soup.
I actually keep two different kinds of cinnamon in my pantry.
Yup, that’s right. I have two kinds of cinnamon — please, don’t act like you’re surprised.
It’s no mystery that I'm a spice freak. I have more than a hundred spices in my pantry and like to grind my own spice mixes using whole spices. I even broke two coffee grinders trying to grind spices in them before buying myself an (almost) professional Electric Spice-and-Nut Grinder, that grounds hard and soft spices and breaks them all down in a few pulses.

Wishing You All A Very Merry Christmas

I can’t quite believe it’s Christmas Eve and I’m here writing my Christmas blog post.
Roaring fires, good food, and the air filled with warmth.
Oh man, I love Christmas.

I love it even if every year at Christmas I'm reminded how bad I am at wrapping gifts.
The presents are usually “wrapped” in some sort of way and then I pile on the tape.
Tape is amazing.
Another option is the Tootsie Roll Twist — doesn’t matter the size or shape of the present.
If all else fails: Gift bag. Gift bags are magic.

Anyways, I’m also busy whipping up a feast for my family.
This year the menu includes a beef roulade stuffed with all sorts of delicious things (I know, awesome), Garlic Thyme Potatoes Anna, Baked Spinach, Maple-Glazed Butternut Squash, Chocolate Avocado Chia Pudding, et cetera, et cetera, et cetera.
I come from a large family where everyone loves to eat well (and drink good wine).
So yeah, a lot of pressure on Mike...

As I look back at the year gone by, there is one thing that stands out the most: YOU GUYS!
