I love me a good mug cake for many reasons.
The first obvious reason is that they are so quick to make — meaning that you don’t have to set aside a whole afternoon for baking when you’re in the mood for a brownie.
Another reason is versatility. There are sweet mug cakes, there are healthier mug cakes, there are protein mug cakes, there are savory mug cakes, the list in endless.
But my number one reason I love mug cakes is portion control.
My healthy living means I can eat almost anything, still I can’t eat everything I want all the time.
So when I want a cookie, a cinnamon roll or a cupcake, it’s a lot easier to make a single serving mug cookie/roll/cupcake than an entire batch of cookies/rolls/cupcakes.
I don’t feel deprived but at the same time I’m skipping the temptation to smash an entire tray of brownies in one sitting.

To honor mug cakes, today I’m sharing my absolutely favorite 1-Minute Chocolate Brownie In A Mug.
All you need to do for this recipe is mix up the ingredients together in a mug (or ramekin), microwave it for 60 seconds, and devour.
It’s likely that you will have the ingredients on hand so you can typically skip the trip to the supermarket.

It’s really delicious, gooey, and fudgy — just like a brownie should be.
Remember what we discussed last week?
Fudgy brownie -> good.
Cakey brownie -> no good.
So DO NOT OVERCOOK. In my experience, if you cook this brownie too long it will become hard, cakey, and will lack flavor. The fudgier the better!

Ingredients
Serves 1

4 tablespoons almond flour
2 tablespoons granulated sweetener of choice (I used coconut sugar)
2 tablespoons cocoa powder
1 large egg, beaten
2 tablespoons milk of your choice (I used almond)
Pinch of salt

Directions

In a mug (or ramekin) stir together almond flour, sugar, cocoa, and salt.
Stir in the egg and milk and whisk with a fork until you have a thick, chocolatey paste. Dot it with a couple of chocolate chips (optional).
Microwave on high for 60 seconds.
If you have a really powerful microwave you may want to check after 30 seconds. It’s done when it is puffed up and springy to the touch but a little gooey – like a brownie should be.
Dig in!

Nutrition facts

One serving yields 378 calories, 22 grams of fat, 42 grams of carbs, and 14 grams of protein.

  8. Curious what size of pan you used? I made these and they were ok, but a bit thin and did not look as good as yours, I think my pan is too big and hence they were also a bit over cooked.

  12. It looks delicious but before I try it I just wanted to check that all the ingredients are there as I'm not clear on how it has 22 g of fat with no real source of fat (just the egg really). BTW I love your recipes and really appreciate that you include the nutritional info

    1. @MaureenRice Since you brought the gms of fat up, it made me curious, so I investigated on the fat sources, what I found: Almond flour has 15 gms of fat per 1/4 cup and 4 T is more than 1/4 cup so most of the fat is coming from the almond flour, of course depending on what milk you use, there is fat in that as well, and the egg/ also in cocoa/cacao .5 gm fat per Tablespoon...it adds up!! :-)

My friend, when I come to NYC this summer, lets meet for super fudgy mug cakes and coffee?! :) On a serious note - have you ever eaten at Fabiane's in Brooklyn? They have a to-die-for-fudgy-chocolate souffle cake that reminds me of your mug cake!

  23. Made this last night & one for hubby too...should have taken your warning on the early check, apparently micro 1250W is high :-) so next time 30-45 seconds instead of 60 seconds!! Made them paleo style..with almond milk and coconut palm sugar (thanks for the suggestion) and the choc chunks from TJs made it perfect, except for my over cooking!! Flavor was wonderful and took away cravings and kept us in the portion range we needed! Thanks so much for this recipe!! It's on regular rotation!! :-)
