Creamy Greek Zucchini Patties (Low Carb & Gluten-Free)


Today I’m going to keep things short because I’m still recovering from being sick this past weekend.
Saturday I woke up to the worst allergy I’ve had in my life so far. I was sneezing non-stop, and also had watery eyes and a cough – the latter two being new for me.
As the day wore on, it pretty much got worse, and my appetite also disappeared.
I should’ve taken that as a sign that something was wrong beyond just allergies, but it didn’t occur to me. I just assumed it was a side effect of the never-ending sneezing.

I went to bed early, hoping that by the morning everything would be normal again. Instead, I woke up at 4am in a cold sweat, and promptly hit the bathroom floor for a little…toilet hugging session (sorry guys for being so graphic).
I spent the whole day bed ridden yesterday, unable to get out.
And you know what’s the worst part of being sick for me? That I can’t go training.
Seriously, just the thought of missing a running session and swimming practice makes me feel even more miserable.
Who cares if I can’t keep any food down for the whole day, or if my energy is down and pain up.
I can’t train. That’s the real drama.

Anyway, these bad boys (aka the creamy Greek zucchini patties) happened before I got sick.
They were delicious. So delicious I could probably use a couple right now.
I’ve labeled as “creamy” because they are so incredibly creamy. There’s not even a hint of cream in the recipe, yet they’re incredibly rich and soft.
You could think of as a sort of Greek latkes, but thicker and creamier (yes, I can’t seem to find a better to word to describe them.)

OK, my fever just clocked in at 101 and I’m feeling a little better. I just took some Dayquil and can’t wait for it to kick in.
I’m debating whether doing Bikram yoga later tonight if I continue to feel better.
That would just be stupid wouldn’t it, my body needs some rest. Or not?

Ingredients
Makes 24 patties

2 lbs / 907 gr zucchini (about 8 large)
2 large free-range organic eggs
2 large handfuls fresh herbs (mint, dill & parsley)
1 cup / 3.8 oz / 110 gr breadcrumbs (or GF breadcrumbs or almond meal)
1 cup / 5.3 oz / 150 gr crumbled feta cheese
1 teaspoon ground cumin
1 teaspoon fine grain sea salt
Ground black pepper to taste
3 tablespoons olive oil, divided

Directions

Wash zucchini and cut off the ends. Grate them on the side holes of a grates (or of a food processor).
Place grated zucchini in a colander and sprinkle with salt. Leave to drain for at least 10 minutes (1 hour best).
Take handfuls of the zucchini and squeeze out all of the moisture.
In a large bowl, beat the eggs, add grated zucchini, herbs, cumin, almond meal (or GF breadcrumbs), feta, salt and pepper. Mix together well.
Transfer mixture to the refrigerator for 20 minutes to allow the almond meal to suck up some of the moisture.
Take small handfuls of mixture and form into patties. If it seems wet, add more almond meal (or GF breadcrumbs) one tablespoon at a time.
Heat one tablespoon of olive oil in a large nonstick frying pan over medium-high heat. When hot cook the patties in batches (do not overcrowd them) about 5 minutes per side, until golden brown,
Remove and drain briefly on paper towel to soak up any excess grease.
Serve!

Nutrition facts

One patty yields 53 calories, 5 grams of fat, 2 grams of carbs and 2 grams of protein.

      And don't even mention how much it sucks to be sick during the summer. I would love to spend all day outdoors instead of blowing my nose non-stop.

I am by no means a triathlete or a fitness instructor or a doc for that matter, but I have always been in favor of "sweating" out an illness - so long as I don't feel like am gonna pass out in the first 5 mins or so - but there are always those times when illness is a body's way of forcing much needed rest...guess only you know the difference, my friend.

    Btw, these patties sound amazing - that crumbled feta is your secret to creaminess?

    1. I hear Shash, I'm all for sweating out an illness but yesterday I was feeling too miserable to go to Bikram. Plus, I wanted to be considerate to the other practitioners, I didn't want to spread my germs all over the studio...

I could give you some advice but I never liked advice and usually followed my own intuition, so I will instead change the subject and say that I love these zucchini fritters - I've been browsing your site and I see you are pretty creative with almond flour - I am using it more and more as a "filling" for meatballs, meatloaves, love the delicate flavor and texture

    I will definitely try these creamy zucchini productions soon....

    1. I love to use almond flour not only because it's GF and paleo-approved but mainly because it brings so much flavor if compared to breadcrumbs. You should definitely try it!

    2. Made these delicious patties tonight, cutting the ingredients in half. Turned out nicely! And I did not have fresh herbs on hand so I used crushed dill seed. Will definitely make them again.

  18. just a quick note to let you know how much we enjoyed these.
    We are not gluten free here so I used the panko bread crumbs.
    I added a grated carrot to the mix also.
    We love these topped with a bit of spicy honey mustard or pupon (?) mustard.

Planning to make them for my man here in Brighton, UK tomorrow evening, as part of our friendly little in-house competition, which we call 'Kitchen Wars' (he's set me the keyword 'circular' so these fit the bill!) I'm new to cooking though and I struggle to know what to put with what.... what sides would you serve with these to make this into a full evening meal? Thanks! Rosie X

  23. I made something similar with spaghetti squash instead of zucchini and it was amazing! I also added shaved fennel for flavor since I didn't have onion or garlic. I paired it with a red pepper yogurt sauce. Yum!

Start drinking raw apple cider vinegar, baking soda, water (8 o water, 1/4 tsp baking soda, and 1T RAW ACV) first thing in the morning...you can also drink it at any time during the day (before meals so it hits your digestive tract first ;) ) and just before bed at night. It balances your body ph...fermented/cultured foods re a good idea too (although I stick with the above as it works so well for me :) The last time I had a cold was about 4 years ago and the flu 5-6 years ago...and that's w/o any flu shots btw.

  27. I made zucchini balls out of this recipe & they're so tasty!! I use about 1 Tbsp of mix per ball & bake them in the oven til they look done. They cook through, the burgers weren't cooking all the way through so the middles were still on the raw side. I am making a big batch now & will freeze the cooked balls for meals this winter when I don't have time to make dinner.
