(Vegan) Crock-Pot Thai Red Curry Lentils


Guys, I have a brand new crock-pot.
I found it under the Christmas tree, all wrapped by Santa Claus. How awesome is that?
But let’s start from the beginning.
About a month ago my old crock-pot died an unnatural death (I won’t tell you how though).
Since that day I felt lost and alone.
You see, I use my crock-pot many many times a week. I make a bunch of things with it: chicken tikka masala, pulled pork, roasted red pepper sauce, bolognese sauce, just to name a few.
I consider it one of the best inventions ever. I can't fathom going through a winter without a crock-pot.
So imagine how I was feeling. Mike without slow cooker -> disaster.

Happy Birthday Dad, [almost]!
I swear that this recipe has nothing to do with my personal love and veneration of Thai cuisine and everything to do with making something nice, spicy, and meaty for Dad.
I know, how thoughtful of me.
Just because my kindness happens to come through via my Thai-food obsession, it doesn’t mean that this post is about me.
It’s my way of celebrating Dad’s birthday and definitely the best way I know to give gifts. Edible gifts, foods that are gifts, gifts that can be used to make food, et cetera, et cetera, et cetera…
So this is my way of saying — through the language of food — HAPPY BIRTHDAY!
And if this gifting opportunity for Dad doubles as a chance for me to have Thai-flavored pulled pork sandwiches, it’s totally a win-win situation.

If you are from Texas, I apologize.
I know that chili con carne is the official dish of the state, and I know how seriously Texans take their chili con carne — so seriously that they even have weekend-long festivals devoted to its creation.
I also know that in Texas if you add things like kidney beans, bell peppers, carrots, oregano, and tomato sauce to chili con carne, you’re going to get an earful.

I’m not sure if you do this as well, but I tend to go in and out food crazes — currently, the only thing I want to eat after running is garlic butter zoodles, which doesn’t sound so bad until you consider that I run every day.
I’ve gone through similar phases with scrambled eggs with avocado and feta, dinners of teriyaki glazed chicken and creamy mashed cauliflower, pan-fried dumplings with chinese eggplant, and for three tormented weeks Xi’an Famous Foods’ Hand-Ripped Noodles (so not paleo, so guilty delicious!)

This is the sort of recipe that falls into the category of ‘Vaguely Oriental’ recipes.
I use the term ‘vaguely’ whenever I make something that has some oriental flare — but I won’t go as far as labeling it ‘Chinese’, ‘Thai’, ‘Vietnamese’, or ‘Japanese’.
Using orientalish ingredients in a dish - such as soy sauce or sesame seeds - doesn’t grant an ‘oriental Passport’ to that dish.

Easy Creamy Crock-Pot Chicken Tikka Masala




Winter is in full swing now and the colder temperatures have descended upon us.
There’s snow, ice, blizzards, and windchill.
Don’t you love it?
No, don’t answer, I already know what you’re going to say. You hate winter, you hate cold, and you can’t wait for spring to arrive.
Fair enough. Not everyone can be a snow-lover like myself.
Still, I think there are so many awesome things you could be doing when it’s freezing outside. Such as sled racing, snowball fighting, even snowman building. How cool is that? (pun intended).
