Did your mom ever make you sloppy joes growing up?
If so, welcome to the club.
If not, I’m sorry, you poor thing. Sloppy joes are awesome.
When I was in high school I would return home from sports practice starving and I’d eat two open-faced sloppy joes with a side of lettuce. Yum.
My diet has changed since then and nowadays I rarely make sloppy joes — although, wouldn't you know, I have a pretty solid healthier recipe for it.

I don’t know if this happens to you as well, but I have this tendency of buying way more bananas than I ever would be willing to eat.
I believe it’s always great to have a bunch of bananas on the counter for a healthy grab-and-go snack or light breakfast. I often buy them in varying colors of green and yellow to assure I have plenty of time to eat them all. Still, bananas tend to ripen quickly, sometimes a lot faster than I have time to eat them. There’s other stuff to eat, you know how it goes. Life just doesn’t revolve around eating bananas.

I believe there is something really satisfying about a good sandwich. Any time of year, any time of day or night, there are times when a sandwich is just the thing.
I have heard people say they don’t like sandwiches and I wonder if their school lunches consisted of bad sandwiches: dubious bread with three slices of baloney stacked over questionable mayo.
I tell them that they really need to try a good sandwich — such as a Rueben on whole wheat bread with sauerkraut and melted Swiss cheese or chicken salad with curry, a Sloppy Joe or a French dip sandwich.

Sweet Potato and Pepper Quesadillas


I can say without a hint of doubt that quesadillas are probably one of my fave top five dinner choices. I love making them at home and trying out all kinds of different combos: vegetarian, spicy, even quesadilla-pizza.
I also find myself ordering them — more often than I’d like to admit — when I’m out to eat.
I’m not really surprised about how much I love them because quesadillas are basically a kicked up grilled cheese on a tortilla instead of bread. And if you didn’t know this about me — or you couldn’t tell from my cauliflower crust grilled cheese enthusiasm — I honestly think that grilled cheese is one of the most perfect foods there is.
Quesadillas have the same golden brown crunchy outside and warm gooey cheese filling. Plus the addition of the salty, savory, and sometimes spicy fillings bring the concept of grilled cheese to a whole new level.

This is the time of the year when one of my least favourite word, “diet”, becomes all the rage once more. It’s the beginning of a New Year and and most of us are feeling inspired and motivated by the resolutions we have made in the last few weeks. When it comes to food, this usually means starting a new diet or eating plan.
All of a sudden we can’t get enough herbal teas, juice cleanses, hot water with lemon, and all the green stuff available (kale, broccoli, spinach, chard, etc.)
So I’m not sure this is the right time to post a recipe for a banana bread dotted with chocolate chunks, and covered in a delicious lemon glaze.

Broccoli is a tough one because it’s one of those greens that not too many people like the taste of. I know a lot of people that eat it largely because they know it’s one of the healthiest food on the planet, but enjoying it as a food? Not really.
Personally I love broccoli. Pasta with broccoli is one of my fave ways to have pasta, and what about my Crock-Pot Broccoli and Beef? So delicious. Not to mention this casserole with broccoli and mushroom or this creamy soup that I make every so often.

If there’s one thing I truly detest in life, it' canned spinach.
It's one of those foods that I can't image liking. To me they taste bland and are pretty much a mushy mess.
I love fresh (and frozen) spinach though. Even as a kid I would choose Mom’s Gratineed Spinach over French fries any day of the week.
Mom was always happy to whip it up for me time and again.
I mean, when a kid asks for spinach there’s no way a mother would refuse such a request, am I right?

As a kid, I loved Reese’s Peanut Butter Cups. They were my favorite. They trumped all other candy bars. No Twix, Snickers, Butterfinger or 3 Musketeers could rival the deliciousness of Reese’s cups.
I always hoarded them, keeping ‘em in the fridge to enjoy the perfect combination of chocolate and peanut butter throughout the year.

I had an idea in mind for a vegan/vegetarian version of my Cottage Pie for a long time but never managed to make it.
Until I found this recipe on the Financial Times a couple of weeks ago.
I know that the Financial Times is not the first newspaper/magazine that comes to mind when in need of recipes, but truth to be told they have a great recipe section.

French Onion Soup Grilled Cheese


Guys, I think I have a favorite new grilled cheese sandwich.
Don’t get me wrong, I’m still fond of my cauliflower crust grilled cheese and of my zucchini crust grilled cheese but this French Onion Soup Grilled Cheese is really special.
I think it has something to do with my love for caramelized onions. In fact, I just realized that a good percentage of my recipes call for either partially caramelized onions or super caramelized onions.
Especially when I am making something vegan or vegetarian caramelized onions add a much needed umami flavor, such as in this sweet potato hash or on this focaccia.
