Chicken Salad with Almonds Apple and Apricots


I do love me a good chicken salad and I am always working on new and different versions.
Fact is, there are probably as many recipes for chicken salad as there are cooks in the world. It’s one of those great dishes that you can basically whip up from anything. As long as there’s chicken in the equation of course.

Today I decided to come up with a low-carb version that still provides a good amount of energy.
Almonds and dried apricots to the rescue.
Almonds are awesome. We all know that. They’re a great resource for protein, heart-healthy, high in good fats, boost weight loss, and help prevent weight gain.

Dried Apricots


And what about dried apricots? Dried apricots are packed with fiber and nutrients (such as calcium and magnesium) and are pretty low in calories.

This chicken salad is great on so many levels: Almonds provide a nice bit of crunch, dried apricots add a bit of sweetness and zest while the green apple brings freshness and a nice touch of color.
All in all, a light and flavorful chicken salad, perfect for a healthy and quick lunch or a BBQ.

Ingredients
Serves 4

1-quart low sodium chicken broth
1 lb / 453 gr boneless, skinless chicken breast halves
1 large green apple, cored and cut into small chunks (I like to leave the skin on)
¼ cup chopped almonds
¼ cup chopped dried apricots
1 (6 oz / 200 gr) container Greek yogurt
3 tablespoons chopped fresh parsley
2 tablespoons mayonnaise (make your own mayo with this recipe)
1 tablespoon white vinegar
½ teaspoon fine grain sea salt
Ground black pepper to taste

Directions

Bring chicken broth to a boil in a large saucepan. Add chicken breast halves, reduce to a simmer, and cook for 20 minutes, or until the chicken is cooked through.
Drain and let chicken cool. Then cut into bite-sized pieces.
In a small bowl mix the Greek yogurt, parsley, mayonnaise, and vinegar. Set aside.
In a large bowl toss chicken, apple, almonds, and apricots with Greek yogurt mixture. Adjust with salt and pepper to taste.
Refrigerate until ready to serve.

One serving yields 298 calories, 14 grams of fat, 9 grams of carbs, and 35 grams of protein.
