 Honey Roasted Plums with Thyme and Olive Oil




The heatwaves are coming and we all know it.
When it gets hot outside the last thing I want to do is turn on the oven.
My apartment is always hot during summer months and turning on the oven would make it the hottest place on the planet.
Not really, obviously, but that’s what it feels like when it’s 100 degrees outside and the oven is cranking at 400 degrees for half an hour.
I have A/C (not central, just a window units) so I can cool the apartment down, but I feel it’s a total waste of money — I don’t know about yours, but my electric bill is bad enough already.
That being said, I don’t completely avoid the oven during the summer, but I try not to use it as much.

Still, there are certain recipes that justify turning on the oven even in 100 degree heat.
Such as roasting fruit.
Roasting fruit is just awesome.
It’s all about starting with something delish, adding delicious stuff, and roasting it in the oven.
It can’t go wrong.
Unless you fuggedaboutit and let it burn. Otherwise, it’s foolproof and utterly delicious.

 Honey Roasted Plums with Thyme and Olive Oil




I topped the plums with a uber simple combo of sweet and savory.
Honey, olive oil, thyme, and a pinch of salt.
The savory keeps the plums balanced. There’s no need to add a lot of sweetness to an already sweet fruit. Not to mention that roasting fruit naturally concentrates and caramelizes the sugars.
Olive oil and thyme enhance the sweetness while balancing it.
What comes out of the oven are tender, warm, soft-skinned plums that are so delicious you won’t regret turning on the oven even on a hot summer day.

Ingredients
Serves 4

6 (not too ripe) plums, cut in half and pitted
2 tablespoons honey (pick one with a mild taste)
A good drizzle of olive oil
1 teaspoon fresh thyme leaves
Pinch of salt

Directions

Preheat oven to 400ºF (200ºC) and place a rack in the middle.
Place halved plums in a 8x8-inch square baking pan, cut side up.
Drizzle with honey, olive oil, sprinkle with thyme leaves and salt.
Roast for about 12 to 14 minutes, or until the plums are cooked through and the honey starts to caramelize and glazes the plums.
Remove from the oven and allow to cool for a couple of minutes.
Serve as it is or with ice-cream, yogurt or creme fraiche.
Roasted plums will last in an airtight container in the refrigeration for up to three days.

One serving yields 88 calories, 2 grams of fat, 20 grams of carbs, and 1 gram of protein.

  1. I completely agree, there are certain things that justify heating up the house, and dessert is always one of them! We've been having a crazy heat wave here and the house is already 80ºF so why not turn the oven on!?!

  2. Dude - plums and thyme and honey definitely justify the oven being turned on! I probably shouldn't admit this - but I run my oven pretty much all year long! I think the fact I'm surrounded by trees comes in handy in keeping my house cool in summer inspite of all the baking I do.

  3. Man these look scrumptious! I am loving this combo of flavors and thyme is my favorite herb. As for that electric bill, I went solar 3 years ago and am so glad I did. Let the San Diego heat come. I turn that AC on guilt-free and chill.

  5. I was thinking if I can use dried thyme? or is it necessary?

    1. You can definitely use dried thyme, just reduce the amount to 1/2 teaspoon as dried thyme tends to have a much stronger flavor than fresh thyme

  6. I'm with ya, Mike! I love grilling fruit in the summer...the sugars caramelize into something completely delicious and intoxicating! And yes, there are times when it's ok to turn on the oven. And these roasted plums totally qualify as one of those times. I need to grab some plums soon because this recipe looks amazing! #WolfpackFruitRoasters

  8. That's so good, Mike! I often roast fruit but usually incorporate them in salads. Perhaps, it's a good idea to make a dessert like soup or ice cream with roasted fruit, right? Adding herbs is a must too! Nicely done, Mike!

  9. We also we use oven a little. Summer ingredients are so easy and welcoming to cook without a oven.
    But if what you need come up with is these, oven is well permitted.
    I would have never thought of using olive oil with peaches. Intriguing. I can see why thyme could work well
